Food safety [edit]
Ground meat has food condom concerns very unlike from whole cuts of meat. If undercooked, it tin lead to nutrient poisoning. In a whole cut from an animate being, the interior of the meat is essentially sterile, even before cooking; any bacterial contamination is on the outer surface of the meat. This is why, for case, it is typically prophylactic for humans to consume steak that is cooked "rare" in such a mode that the interior of the cut remains carmine in colour - the searing of the exterior of the meat is enough to impale any bacteria on the surface. Yet, when meat is ground, bacterial contagion from the surface can exist distributed throughout the meat. If ground beefiness is not well cooked all the way through, at that place is a significant take a chance that plenty pathogenic bacteria will survive to cause illness. Moreover, the warming will speed the reproduction of bacteria.[4] [5] Undercooked Jack in the Box hamburgers contaminated in this mode were responsible for 4 deaths and the illness of hundreds of people in 1993.[6]
To ensure the condom of ground meat distributed through the National School Tiffin Program, food banks, federal food and nutrition programs, the United States Department of Agriculture has established food prophylactic and quality requirements for the footing beef that it purchases. A 2010 United States National Research Quango report reviewed the scientific basis of the Section's ground beef rubber standards, evaluated how the standards compare to those used by big retail and commercial food service purchasers of ground beefiness, and looked at ways to establish periodic evaluations of the Federal Buy Ground Beefiness Program.[7] The written report institute that although the condom requirements could be strengthened using scientific concepts, the prevention of future outbreaks of food-borne disease will depend on eliminating contamination during product and ensuring meat is properly cooked before it is served.[viii]
